When you remove stock for an inventory item, the Form asks you the stock quantity to use/remove, the location from where it should be picked, bunch of other info, and “Order For”. Order For records who is consuming/using this stock quantity.

To run numbers on who took how much, have a look at Reports -.> Inventory Report → Stock Summary → Choose a person and a date range

You can also look at individual stock transactions from an inventory record: It’s detail page → History → Stock History
